According to my research, the only sausage that was unambiguously invented in the US was bologna, but it's not clear in which state. The breakfast sausage may also have been, but the same problem arises. There may be some varieties of boudin distinctive to Louisiana, as well. However, all of those sausages are really more in Italian or French styles than German ones, so it may not be authentic for an English speaker to use "wurst" to refer to any of them.

Technically wouldn't any sausage containing meat of an animal that is only found in north america count?

Sausages are more distinctively identified by the means used to make them and the seasonings involved than by the meats that constitute them. However, if we go by this criterion, an entirely new world sausage would be gator boudin. This would make Louisiana the State of the Wurst.
