Parrying is a fairly major gameplay element, but it's useless on 95% of the bosses. They probably should have had more bosses where you could do it.

Yes, and it does fit into the concept but the director also said he wanted the Gwyn fight to go differently, with more chances for Gwyn to show his various moves.

Well, aside from dying like a bitch within the first few seconds, I'm sure most players got to see plenty of his moves.  By the time you reach Gwyn, you're pretty well trained to not try parry against a boss.  Doubly so if you're a demons souls vet.

...parry didn't work against false kind allant, did it?

Is it wrong that I went through and beat all of Dark Souls with not only never parrying but never having even learned how to do it? Hell, still don't know how. Guess I should look it up somewhere sometime since the manual and tutorial area don't tell ya a damn thing about it as far as I remember.

Nah, tanking up behind a high stability shield is perfectly viable. With a 100 stability great shield you can even just block Manus' juggle combo in full. You can roll around like a monkey too. With dark wood grain you have like a full half second of invulnerability frames.

TL;DR Notes:

- Miyazaki has basically nothing to do with production. He's currently working on another project.
- "the world will be more densely populated"
- The terms 'evolution', 'departure', 'update' and of course 'accessibility' come up far too often.
- "a system that will easily allow you to review the clues and hints you've seen earlier in the game"
- It will not take place in Lordran, but "the name of the world will be key to the story"
- "the action is something that I want to enhance in the game"
- Production is currently 25% complete with no comment on if it will be released in this hardware generation.
- (while pointing at an image of the knight from the trailer) "this is the main hero"
- There is "an undead who acts as executioner if you commit evil deeds" (in response to a moral system) "yes, definitely."

Yea. The whole good/evil thing was left to the player to decide on what they want. Soul hungry Darkwraith or Sunbro who resists Kaathe's words.
