I've definitely knocked them off ledges, or whatever, and generally wasted their uber. But I've never juggled someone. I see people get poofed away all the time though.

Yes, let's be perfectly clear here. I've witnessed and experienced plenty of uber-knockbacks, but have yet to see a Pyro auditioning for the fucking Ringling Brothers.

I've been on both ends of [the juggle].  The problem is that if the target is not too bewildered to figure out what's going on, he can simply point his gun straight down and implant 10,000 rounds per minute directly into your skull.

Poofing ubers away from you has an added benefit - they are now the fuck away from you.

That's why it's an ambush. The damage is done before they can respond. It's by no means an invincible tactic, but dismissing it because you might get shot is silly. You may as well just not do anything, which a shocking number of people actually do.

I was on some server the other day where during humiliation, the losing team was invulnerable and the winning team suddenly had infinite ammo with no reloading.  I forced a fellow Scout halfway through the ceiling just by holding down mouse1.

It doesn't really require a wall to juggle someone in the air, but it's certainly much easier with one, and juggling in the open is a good way to just get shot by everyone else. It's better to just push back at a nice ballistic angle, and then hide, only to do it again once they try to advance.

You misunderstand my point.  I'm not saying it's not worthwhile to juggle, I'm saying it's hard to do visibly, because you tend to die even/especially if you're successful.

That of course was my other point.

I'm having no luck at all as a Soldier these days.  Pyros and Scouts get right up in my grill and have their way with me and I'm stuck blowing my own ass up.  Or, y'know, reloading.

Say what you will about my skill at TF2, most of you know that I used to be a servicable Soldier.

Anyone else feel this way?

Sometimes... I can't kill sentries with a soldier.  I'll fire all 4 rockets, and it's not dead.  Then someone kills me.

Soldiers simply do not have the damage capacity to destroy a fully-tanked level 3 sentry.  It's not supposed to be their gig.  You're not personally failing if you find you can't do it.

They do come really close, though, so double up with a buddy or find some way to compromise their wrenchin' long enough and you've got it.

I've already gone on at length about Double Spy, and I've Got Some Stories to Tell about Double Combat Medic, but Double Soldier may just be the answer to everything in TF2 ever.

You can never have too many Soldiers, attacking or defending, unlike every single other class.

...of course that's possibly because my Demoman records got fucked by the achievement server.

Coming in a little late on the uber-juggling thing, but I have to point out something that some people seem to have dismissed: The Pyro might die, but he's just distracted you from being productive with that uber while you're dealing with him. Which is generally a good thing for the team that would otherwise have had to deal with it.
