Okay it's not really a strict "recipe" so much as a vague collection of instructions and it's pretty loose, lots of "taste and fiddle with it to your satisfaction". I don't like that, but i've never put in the effort to measure and determine the optimal settings. It's the ultimate soup for if you're sickly though, since it's basically every healthy food ever in a big pot.
You will need:
A few big cans of chicken broth
Some chicken breasts, chopped into soup-sized chunks
Jalapenos or other spicy peppers, like a LOT of them. I use maybe 15-20 for a pot. This is less crazy than it sounds; see below.
Fresh chopped garlic, like 4 or 5 cloves probably
Fresh peeled and chopped ginger, probably an inch or two (those two can be powdered if you must but fresh is a lot better)
A chopped onion
Lemon Juice
Lime Juice
Orange Juice
Wild and White Rices (I use this Royal Blend thing that comes in a mixed jar but you can use a package or two of Wild Rice and a few uncooked cups of white rice
Four pots, time, and also an assistant helps
Okay. First up, make the rices according to their package directions. They go in last but since rice takes a while might as well get that done now. You want enough rice for the soup to be filling but not so much that it turns into gruel, so use your judgment here based on the amount of broth you intend to use.
Take your spicy peppers, and de-seed them. Put the seeds in a food processor or blender and blitz until they're a bit cracked, then toss them in a small pot with like a cup or two of chicken broth - enough to cover with some to spare, but don't use more than like half a big can - then bring to a boil, then cover and simmer for like a half hour or more. You're trying to extract the spicy oils and get them in the broth. Meanwhile, chop up the jalapeno flesh into decent-sized chunks.
Toss your onion, garlic, ginger, jalapeno flesh, and the rest of the broth in a big soup pot, over high heat. Strain the seeds out of the spicy broth, and pour that in - I just pour the little pot through a fine strainer directly into the big pot. Get this boiling. Then add an appropriate amount of citrus juice that is one part lemon juice, two parts lime juice, and three or four parts orange juice, to taste - you want a balance of sweet, spicy, and tangy. Can't really add more spicy at this point but you should have plenty if you did the seeds right, so just add more orange juice if it's too tangy and more lemon/lime if it's too sweet.
Now toss in your chicken and boil for maybe twenty to thirty minutes, get it nice and cooked. Then put in your rices. Cook for another maybe five or ten minutes, then you're done.
Soup is delicious and does wonders for your immune system and it's even better reheated the next day. In conclusion, fuck the haters, citrus is awesome.
