The instructor knows -- I didn't refuse to help them, they refused to let me help them. But whether that makes a difference to my grade remains to be seen. Point is, left to my own devices I do okay.

Oh, and today was my Baking practical. I have a burn on my hand because some dipshit didn't watch where they were going when I was pulling something out of the oven. Unrelated, I almost stabbed a girl in the ass because she took my warning of "Got a sharp right behind you" to mean "Now would be an excellent time for you to bend over and look for things under the worktable." So looking forward to next quarter, where there will be no first-quarter students in my lab classes. It's a testament to my willpower and self-control that nobody got a face-punching (or ass-stabbing on purpose) today.

We had dinner for breakfast this morning. I took a whole sirloin steak, bisected it, trimmed the rind and salted;  let it sit until it reached room temperature and cooked it in a cast iron skillet on high for 90 seconds a side. Served with Broccoli & Cheese Sauce and white wine & chicken broth mashed potatoes. The potatoes turned out too strong, so we ended up just kind of pitching them, but the Broccoli and Steak were A+. Made the broccoli by taking a steamfresh pouch of veggies, nuking them until they were done, and then adding a tbsp of butter, a pinch of salt, and three pumps worth of some aged cheddar cheese sauce we bought at the local grocery store. (we have a plastic dispenser the wife ordered from US Plastics to hold it in, well worth the money) I then shoook up the package and then tightened it into a roll and sort of squished it around until everything was hot and well incorporated.

Portabello Mushroom Risotto, and it came out perfectly. The last time I made this I ruined it by cooking it too long, so it's a relief I actually did it right this time.

I've got a running project on my blog called We All Scream At Ice Cream.  People suggest the weirdest ice cream flavor they'd actually like to eat, and I make one weekly.  Week one was cheddar, and it turned out really really well.  I just finished the second one, chocolate pudding pizza ice cream.

This thing is so pretty.  It's the worst lie I've ever told.  "This thing is delicious!  Trust it!"

It seems a little weird to crosspost stuff from that blog here, but it might be worth doing.  Would anybody be interested if I made a thread for it and opened it up to suggestions from Brontoforumites?  I won't make foie gras and diamond flavored ice cream because I'm a broke mu'fucka, but I won't reject anything based on how mentally unstable of an idea it is.

Mustard ice cream. Use bavarian or dusseldorf and make sure it does not have any God Damn Horseradish in it.

On that note, though, Wasabi ice cream.

I've actually had this before, I think. Also there's a local ice cream place that sells Guinness ice cream - it's actually quite good!

My suggestion: Guacamole/Avocado.

Made chicken tikka masala tonight out of a package of leg quarters; used the bones, skin and fat to make stock, which is cooling in the fridge. Probably going to use the stock tomorrow for brown sauce for chinese; we've been trying to find an ideal oyster-based brown sauce for a while, and most of the tips out there seem to agree on stock and corn syrup, so we'll see how it goes.

Oh puh leeze. Giving you poltroons the recipe would be like handing a chisel to a chimpanzee and expecting La Pietà. But if you must know....

5 avocados
Lime or lemon juice to taste
1 onion, chopped
3-7 cloves garlic, minced
1 tomato, chopped
Pepper to taste
Jalapeno peppers, chopped (optional)

Add the lemon/lime juice to the avocados and mash. Throw everything else in and mix. Serve with tortillas or burritos. Alternatively, eat it like ice cream because it's just that good.

This is because it should be taken as read that every recipe has cilantro in it. Telling someone to add cilantro to a recipe is kitchen-speak for "turn it off and back on again".

EDIT: With that in mind, cilantro ice cream. Also, onion ice cream.

Good Eats made a good avacado ice cream that I've tried before. Guacamole ice cream is crazy.

I love love love beer ice cream.  Humphry Slocombe in San Francisco does a bunch of different kinds during beer week, and I so badly want to go for that.

I'd like to, and hopefully will, get around to all of these flavors.  There's already a small backlog, but some of these seem easy or precedented enough that I could do them as a side project in addition to whatever the "main" ice cream is.

Actually, maybe I'll do guacamole AND cilantro this week.  It'd fit in with the main one, which is demented: enchilada ice cream.

I had a couple of their beer flavors during beer week.  They were good, but not transcendent.  A lot of their limited time flavors are worth trying but not worth crying over if you miss.  They set a high bar by establishing Secret Breakfast as their defining flavor.
